Bilton releases second vintage of its opulent Pinotage

Bilton Wine Estate, the picturesque farm situated on the verdant slopes of the Helderberg in an area renowned for its acclaimed red wines, has just released the second vintage of its lauded Pinotage, the opulent Bilton Pinotage 2007. Its predecessor, the maiden Pinotage vintage of winemaker Rudi de Wet, was crowned SA Champion Pinotage at the 2006 SA Young Wine Show.

Intense, deep ebony and purple in colour, the Bilton Pinotage 2007 teems with classic aromas of white turkish delight, cherries and blue berries that are beautifully offset by dark chocolate, roasted coffee beans and plums. The opulent yet elegant palate shows great structure balanced by an integrated wood character with soft tones of ripened bananas and earthy beetroot ending with a graceful finish and a long lasting aftertaste.

In the cellar, the grapes were carefully hand-sorted and pre-cooled prior to fermentation. The wine was matured for 12 months in a combination of French and Hungarian oak, 80% of which were new and 20% second-fill barrels.

Rudi suggests that you try this versatile food partner with a selection of interesting dishes such as spicy samosas, black forest ham, biltong ravioli, oxtail or even a decadent chocolate soufflé.
