#GreenMondaySA: Bean bunny chow

An SA favourite, the famous bunny chow originated in the Durban Indian community and was made for saucy curry. Substitute your meat with beans and you're good to go for Green Monday. Here's how to make it:

Ingredients

• Two onions, chopped
• Two cans of chopped tomatoes
• 1/2 can of tomato puree
• Four baby marrows, sliced (optional)
• One punnet of button mushrooms (optional)
• One teaspoon (5ml) cayenne pepper
• One tablespoon (15ml) ground cumin
• One tablespoon (15ml) ground coriander
• Two tablespoons (15ml) ground turmeric
• One tablespoon (15ml) of garam masala
• Two cloves of garlic
• Two tins of butter beans
• Two loaves of bread, cut in half and hollowed

Instructions

1. Heat oil in a pot.
2. Add garlic, onions and all the spices and cook until onions are translucent.
3. Add in baby marrows, button mushrooms and fry for 10 minutes.
4. Add in two cans of chopped tomato and tomato puree.
5. Put on a very low heat and let simmer for between 30 minutes and two hours.
6. Add butter beans and cook for five more minutes.
7. Fill each half of the loaf with the curry.
8. Enjoy!
